50 gr mint leaves (I had 3 types of mint, but you can use whatever mint you have on hand)
50 gr ginger
2 kg lemons
2 cups sugar
cold regular or sparkling water and ice cubes
1. In a food processor add the peeled ginger and pulse a couple of times. Add the mint leaves and pulse until finely chopped.
2. Juice the lemons and add the sugar. Stir until the sugar is dissolved and combine with the mint.
3. Cover with plastic wrap and leave the mixture in the fridge for at least 12 hours and sieve through a fine sieve. Transfer to a bottle and you can store it in the fridge up to a week.
4. In a tall glass pour some of the lemonade, add ice cubes and fill with cold water. Garnish with mint leaves and a slice of lemon
