Potato & Green Bean Salad



1 kg peeled, diced and boiled potatoes
500 gr boiled green beans (or white beans)
3 tbsp mustard
3 tbsp white wine vinegar (or apple vinegar)
1 1/2 tsp salt
1 1/2 tsp sugar
100 ml extra virgin olive oil (or vegetable oil, or sunflower oil)
2 tbsp fresh or frozen dill
2 tbsp fresh or frozen parsley



1. In two separate pots add water and a tsp of salt each and get it boiling on high heat. In one add the green beans (you can use fresh or frozen) and in the other the peeled and diced potatoes. Boil until they are ready and drain them. They usually take different time, that’s why you have to boil them in different pots.


2. While they’re boiling in a big mixing bowl add the rest of the ingredients and stir until combined. Add the potatoes and the beans and stir again. Let it cool completely and if you can wait leave it in the fridge overnight, it’s even better on the next day :) Serve it as a salad or a side dish to any roast meat ^.^
